Portobello Mushrooms with Rucola (Arugula) and Roasted Pepper Cottage Cheese




Cook In pan
Rinse your salad and open your cottage cheese. Try to refrain from eating all the cottage cheese.
Voila! So delicious :)

Sauce for Rodfrugts

Simple topping for vegetables or meat

½ container of creme fraiche
3 teaspoons of an all around spice
2 teaspoons of dill
a handful of freshly chopped parsley
a handful of freshly chopped basil

Chop the parsley and basil and add to creme fraiche. Stir
Add dry spices and then stir again
Serve.

The taste should be slightly salty and very light. I don't really measure so these are all approximate. :)

Chicken and Root Fruits (Kylling med rodfrugts)

You will need:
1 bag of Root Fruits
½ bag of small potatoes
3 onions
2 peppers
olive oil
salt 
pepper
Favorite seasoning for chicken
Thyme
Chicken (package had 5 pieces, gotta love Fakta. 5 for 30 kroner)
1 large baking pan and a small one for the chicken
Serves 4 easily with leftover root fruits but most likely not chicken-great for lunch the next day.
Wash and chop the root fruits
Also chop about half a bag of small potatoes
Chop onions and peppers. (Also you can use any leftover vegetables you have, I was cleaning out our fridge :) )
Combine olive oil, veggies, salt and pepper to taste and then toss to coat everything.
Season chicken with favorite seasoning and thyme
Cook at 180-200 Celcius until veggies are soft and chicken is done.
It was a big hit.

buffalo chicken wraps

Slice one package of chicken
2 TBS Chili sauce, 3 TBS of Olive oil, and pinch of an all around seasoning. Also you can add Bleu Cheese, Feta Cheese, Creme Fraiche or Italian dressing to the wrap at the end. I only add creme fraiche.
Also, I forgot to take a picture of the wraps; any large wrap will do!


Combine chicken and above ingredients
Stir until coated
Chop up a piece of cucumber and 1-2 peppers

Cook chicken in saucepan until done
Take a wrap, add veggies and chicken. Top with Creme Fraiche
Roll up and enjoy!

Makeup of the day

Spanish Rice and Quesadillas


Spanish Rice: 2 cans of Tomato Puree
2.5 Cups of Instant  Rice
3 Cups of Vegetable Broth
3-4 Tsp of Cumin
1 TBS of All Around Spice
Pepper to taste (I use a lot!)
Hot sauce (optional. We love spicy so...)
Cook Rice in broth. Add remaining ingredients and cook until warmed through.
Quesadillas
1 package of chicken breast-I used a package with 3 pieces
All Around Spice
3 Peppers
Chedder Cheese-4 cup package
10 Tortillas
One 13x9 baking pan
Olive oil
Preheat oven to 200 C
Cook chicken with all around spice or any rub of your choice
Chop chicken and peppers into whatever size you'd like
layer 2 Tortillas, cheese, chicken and peppers until you run out
drizzle olive oil and some all around spice or salt and pepper on the top most tortillas so they crisp up
bake for around 20 minutes

Serve with your Rice, Creme Fraiche, Salsa, and Guacamole.
