Spanish Rice and Quesadillas


Spanish Rice: 2 cans of Tomato Puree
2.5 Cups of Instant  Rice
3 Cups of Vegetable Broth
3-4 Tsp of Cumin
1 TBS of All Around Spice
Pepper to taste (I use a lot!)
Hot sauce (optional. We love spicy so...)
Cook Rice in broth. Add remaining ingredients and cook until warmed through.
Quesadillas
1 package of chicken breast-I used a package with 3 pieces
All Around Spice
3 Peppers
Chedder Cheese-4 cup package
10 Tortillas
One 13x9 baking pan
Olive oil
Preheat oven to 200 C
Cook chicken with all around spice or any rub of your choice
Chop chicken and peppers into whatever size you'd like
layer 2 Tortillas, cheese, chicken and peppers until you run out
drizzle olive oil and some all around spice or salt and pepper on the top most tortillas so they crisp up
bake for around 20 minutes

Serve with your Rice, Creme Fraiche, Salsa, and Guacamole.
